1 lb medium shrimp - cooked and cooled
2 (6 1/2 oz) jars marinated artichoke bottoms - drained and chopped
2 tbsp finely chopped flat-leaf parsley
2 cloves finely chopped garlic
4 tbsp olive oil
4 tsp fresh lemon juice
Salt and freshly ground black pepper

Put the artichokes into a mixing bowl and add the parsley and garlic. Blend well. Add the shrimp, oil and lemon juice. Add salt and pepper to taste. Toss and serve. Serves 4
