1 bag shredded hash browns, thawed
1 red bell pepper finely chopped
3 eggs
1 cup shredded parmesan cheese
Salt to taste
Pepper to taste
1tsp dried parsley
Sour cream and chopped scallions (garnish)

Combine hash browns and peppers. In bowl mix beaten eggs and cheese Pour cheese and egg mixture over the potatoes and peppers and mix well. Season with salt, pepper, and parsley and stir gently. Heat a pan with a touch of oil and fry patties till golden brown on both sides. To serve top each one with sour cream and scallions if desired.
