1 lb fresh cheese tortellini
1/4 c thinly sliced red onion
1 red pepper, quartered and sliced
1 (6 oz) jar artichoke hearts
2-3 Roma tomatoes, seeded and chopped
1/2 c grated parmesan cheese
1/2 c pesto
1/3 c mayonnaise
1/2 c sour cream

Cook tortellini 3-5 minutes. Drain and rinse with cold water. Drain well and place in a bowl. Add onion, pepper, artichoke hearts and tomato.

In a small bowl, blend pesto, mayonnaise, and sour cream. Add this mixture and parmesan to tortellini and toss well. Serve cold, garnish with extra parmesan.
