MOBJACK IMPERIEL CRAB

1/2 cup milk
1 1/2 tsp butter
1 tsp flour
1 egg yolk, well beaten
1/2 tsp dry mustard and cayenne pepper
1/4 tsp salt and pepper
1 1/2 tsp lemon juice
1/2 tsp Worcestershire sauce
2 cups mayonnaise
1 lb backfin crab meat
1 cup milk
Chopped parsley, garnish

Heat 1/2 cup milk to boiling point. Melt the butter, add flour and pour heated milk into the mixture, beat until creamy and allow to cool. Add egg, seasonings, lemon juice and 1 cup mayonnaise, blending well. Add crab and toss lightly.

Fill small dishes. Mix remaining mayonnaise and 1 cup milk and brush on top. Finely, sprinkle with parsley. Bake at 400 for 8-10 minutes or until brown. Serves 4-6
