2 Tbsp. butter
1 cup chopped onion
1 cup chopped green bell pepper
1 lb canned diced tomatoes
2 lbs frozen hash brown potatoes
8 oz sour cream
1 lb shredded cheddar cheese
2 Tbsp. Cajun Seasoning

Melt butter and saute onion and green pepper until crisp tender in a large sauté pan. Add tomatoes and simmer for 5 minutes. Combine potatoes, tomato mixture, sour cream, cheese and Cajun Seasoning in a large bowl. Mix well. Coat a shallow baking pan with cooking spray. Pour potato mixture into pan. Bake at 350 for 40 minutes. Serves 12
