BUTT RUB

2 tbsp Kosher salt, ground cumin seed, chili powder, black pepper and ground sage
4 tbsp Hungarian paprika and dark brown sugar
1 tbsp cayenne pepper

Makes about 1 cup, enough for a good pork butt. (This should be generously rubbed all over your pork butt or shoulder a minimum of a few hours or, preferably, the day before your pig meat is smoked.)
