3 large peaches, peeled and chopped
1 large Vidalia onion, peeled and chopped
2 jalapeno peppers, minced
Grated zest and juice of 1 lime
1/2 cup sugar
1/4 cup wine vinegar
Salt and pepper to taste
1/4 cup minced fresh cilantro

Combine all ingredients and let stand at least 15 minutes or up to one day ahead. Serve as an appetizer with tortilla chips.
