Onion Spread:

2 cups grated Vidalia onions, squeezed dry
1 cup freshly grated Parmesan cheese
1 cup full-fat mayonnaise
1/2 teaspoon cayenne pepper

Blend first four ingredients. Refrigerate, covered, several hours or up to one week before using.



To Bake:

1 (16 oz) loaf (very thinly sliced) cocktail party pumpernickel or rye bread
Paprika



Makes about 40. Preheat oven to 350 degrees.
Spread heaping tablespoon evenly on bread slice. Place in a single layer on a baking sheet. Sprinkle tops lightly with paprika.

Bake 15-20 minutes or until topping is puffed and golden. Serve hot or warm.
