9 lasagna noodles, uncooked
1 lb ground beef
1 can black beans, drained and rinsed
1 (15 oz) can tomato sauce
1 can tomatoes and green chilies
1 (15 oz) container ricotta cheese
1 egg
1/4 cup fresh cilantro, chopped
2 cups shredded Monterey jack cheese

In a saucepan, combine tomato sauce, black beans and tomatoes and green chilies. Simmer 10 minutes. Brown meat and add to sauce.

In a 13x9 inch baking pan, layer beginning with a thin layer of sauce, uncooked noodles, sauce, 1 cup cheese, noodles, ricotta, noodles, sauce and top with cheese. Bake at 375 for 1 hour or until heated through. Let stand 15 minutes before slicing.
