CHAMPAGNE GLAZE

1 cup brown sugar
1 bottle dry champagne
2 tbsp honey
1 tsp ginger
1 tsp dry mustard

Combine ingredients in saucepan and bring to a boil, stirring frequently. Lower heat and simmer 15-20 minutes. Brush glaze over ham (or roast) during last 30 minutes of cooking. Glaze will be sufficient to coat one whole ham (either boneless or bone-in ham) or pork roast
