1/2 cup honey
1/4 cup lemon juice
1/4 tsp curry powder
1 clove garlic, crushed
1 tbsp mustard seed
1 tbsp Dijon mustard
3 tbsp butter
1 tbsp minced green onion
6 boneless skinless split chicken breasts, about 1 1/2 pounds total
1/2 tsp salt
1/2 tsp ground pepper

Garnish:
Shredded spinach leaves
Chopped pistachio nuts

Place the honey and next 4 ingredients in a small saucepan, heating on a grill rack till hot and well blended, stirring frequently. Whisk in the mustard, butter and onion and keep warm.

Lightly coat the grill rack with oil and place the chicken on the rack over medium high heat, 4 to 6 inches from the heat source, cooking 7 minutes per side or till the chicken tests done, basting with the warm sauce frequently.

Place each chicken breast on a bed of spinach and drizzle sauce over top, sprinkling on the nuts.
Serves 6.
