4 boneless, skinless chicken breasts, cut into bite-size pieces
1 small onion
1 tsp each ginger and Dijon mustard
1 tbsp each oil and soy sauce
Juice of 1 orange or lemon
1/2 cup jelly (plum, apricot, or apple are all good)
Cooked rice
Place chicken in a baking pan. Combine remaining ingredients in a food process and process until smooth. Pour mixture over chicken and marinate for 30 minutes at room temperature, turning pieces occasionally.
Preheat oven to 475. Bake, uncovered, for 10-12 minutes or until golden brown. Serve over rice. Serves 4
