1/4 cup oil
1 1/2 lbs peeled and deveined shrimp or fish fillets, cut into 1 1/2 inch pieces
1 tbsp minced garlic
1/2 tsp salt
1/4 tsp pepper
1/2 cup Italian-seasoned bread crumbs
3 tbsp chopped parsley
Lemon wedges
Preheat oven to 475. Pour oil into a 13x9 inch baking dish. Add shrimp or fish. Sprinkle with seasonings. Toss with breadcrumbs and parsley. Bake for 5 minutes. Turn gently with slotted spoon. Bake 3-5 minutes or until bread crumbs are brown. Serve immediately with lemon wedges.
