Orange Spice Rub
1/3 cup sugar
3 tsp orange peel
1/2 tsp mace, allspice and salt
1/4 tsp cayenne pepper

Stuffing
1 large orange, peeled and segmented
1 sweet onion, course cut
1/4 cup Grand Marnier

Grand Marnier Mop
4 parts orange juice
1 part lemon and apple juices

The night before smoking, rub the chicken with the orange juice, followed by the rub. Refrigerate overnight. One hour before smoking, stuff the bird with the stuffing ingredients.
Mop about every 1/2 hour during smoking. Smoke the chicken about 4-6 hours or until the drumsticks move easily. During the last hour of smoking, mop with mixture of half above mop and half Grand Marnier.

1 (8 oz) pkg cream cheese, softened 3/4 cup sour cream 1/2 cup brown sugar 2 tbsp Grand Marnier Mix ingredients well. Chill until ready to serve. Serve with grapes.
