* STUFFED MUSHROOMS ALFREDO *

18 large mushrooms, stems removed and chopped
Olive oil
1 1/2 cups finely shredded rotisserie chicken without skin
2/3 cup refrigerated Alfredo sauce
1/2 cup seasoned dry Italian bread crumbs
1/4 cup finely chopped onion
2 tbsp chopped parsley
1 tsp minced garlic
Salt and pepper, to taste
1 egg, beaten
1/4 cup grated Parmesan cheese
Preheat oven to 350. Lightly brush mushrooms with olive oil. Place on a 13x9 inch baking dish.
Mix chicken and next 5 ingredients in a bowl. Season with salt and pepper. Mix in eggs. Mound about 1 rounded tbsp of chicken mixture in each cap, pressing down firmly and forming dome in the center. Sprinkle with cheese.
Bake until filling is firm and heated through, 20-25 minutes. Serve warm or at room temperature.
