2 tbsp vegetable oil
1 onion finely chopped
3 cloves garlic minced
2 (8 oz) cans tomato sauce
1 1/2 cups cider vinegar
1/4 cup Worcestershire sauce and sugar
2 tbsp brown sugar
1 tbsp chili powder
2 tsp salt
1 tsp each dry mustard and paprika
1/2 tsp cayenne pepper
Pinch of crumbled dried thyme and marjoram
1/2 cup each lemon juice and water or 1 cup beer
2 drops liquid smoke
Heat the oil in a saucepan over moderate heat and add the onion and garlic. Cook gently, stirring, for about 5 minutes. Add remaining ingredients. Reduce the heat and simmer, partially covered, until the sauce has thickened slightly, about 20 minutes. Makes about 2 1/2 cups.
