5 russet potatoes (about 3 lbs)
3 tbsp butter
1/2 cup half-and-half
1 cup grated Parmigiano-Reggiano cheese
2 tsp chopped fresh rosemary
2 tbsp chopped fresh flat leaf parsley
1 tsp salt
1/2 tsp pepper

Microwave potatoes 13-15 minutes or until tender. Let cool slightly. Peel and mash. Add butter and remaining ingredients, mashing until blended. Serve warm. Serves 6-8
