ITALIAN FRIED POTATOES

2 lb potatoes, peeled
4 clove garlic
12 tbsp olive oil
Salt and pepper
4 tbsp dry white wine and red wine vinegar
2 tbsp beef broth

Place potatoes and garlic cloves in a saucepan, salting the water and bring to a boil, cooking until tender, about 20 minutes. Drain and slice when cool enough to handle. Place in a medium bowl and toss gently with olive oil, salt and pepper. In a small saucepan, heat remaining ingredients and pour over the potatoes and toss gently. Serves 4
