4 cups rice, cooked
1 1/2 lb ground beef
2 onions, chopped
2 clove garlic, minced
1 green bell pepper, chopped
1 can green chilies and hot tomatoes
2 cans tomato sauce, stewed tomatoes
1 can whole kernel corn, drained
3 tbsp chile powder
1 1/2 tsp salt
1/8 tsp pepper
2 cups grated cheddar cheese
Saute onions, garlic and pepper. Add hamburger and brown. Add remaining ingredients except cheese and let simmer for 15 minutes. Add rice and half the cheese; stir. Put into a large casserole dish and cover with remaining cheese. Bake at 350 for 30 minutes or until cheese is lightly browned.
