2 lbs ground beef chuck
1 tbsp chopped fresh tarragon
1/2 tsp salt and pepper
3/4 cup (3 oz.) crumbled blue cheese
12 (1/2 inch-thick) slices rustic bread
1 tbsp olive oil
Place ground beef, tarragon, salt and pepper in large bowl; mix well. Shape mixture into 12 thin (4 inch) patties.
Place about 2 tbsp of the blue cheese on 6 of the patties; top with remaining patties. Press edges to seal.
Heat grill. Place patties on charcoal grill 4 to 6 inch from medium coals; cover grill. Grill 10 to 12 minutes or until no longer pink in center, turning once.
Brush both sides of bread slices with oil. Place around edges of grill; grill 1 to 2 minutes or until golden brown, turning once. Serve hamburgers on grilled bread. Makes 6 sandwiches
