3 medium red potatoes, peeled and cut into 1 inch cubes
2 cups chicken broth
1 small onion, peeled and chopped
3 tbsp butter and flour
Crushed red pepper flakes and black pepper
3 cups milk
3 cups milk or heavy cream
1/2 tsp sugar
1 cup shredded sharp cheddar cheese
1 cup cubed cooked ham or cooked crumbed bacon

Boil the potatoes in the broth and cook until tender. Drain; reserving broth and set potatoes aside. Measure 1 cup cooking liquid add additional broth or water if needed; set aside.

Saute onion in the butter until translucent and tender, stirring occasionally. Add flour to saucepan; add seasoning, to taste, and cook 3-4 minutes. Gradually add potatoes and reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan. Add cheese and ham, stirring to combine. Simmer over low heat for about 30 minutes, stirring frequently.
