8 (6 inch) Portobello mushrooms
6 clove garlic, peeled
1 medium tomato and red bell pepper
8 oz goat cheese
1/2 cup mascarpone cheese or combine 1/4 cup sour cream and 4 oz cream cheese
1 1/2 tsp pepper
1 1/2 cups wood chips
1 wooden skewer

Cover chips and skewers with water and soak for 30 minutes. Add chips to fire. Place empty water pan in smoker and fill with warm water. Remove stems from mushrooms. Clean mushrooms. Thread garlic cloves on wooden skewer, then whole mushrooms, tomato and bell pepper on smoker food rack. Cover with smoker lid and smoke 2-3 hours or until vegetables are cooked, removing vegetables as they become tender.

Cut pepper and tomato in half and remove seeds. Remove smoked garlic from skewers. Blend garlic, tomatoes and pepper until smooth. Add goat cheese and mascarpone, continue blending until smooth. Place 4 mushrooms on a baking sheet, stem side up. Spoon mixture evenly on mushrooms and top with remaining mushrooms, stem side down. Bake at 350 for 10 minutes or until heated through. Serves 4
