1 lb mushrooms, cleaned and thickly sliced
1 tbsp butter
2 minced shallots
1/2 cup butter
2 tbsp flour
1/2 cup half and half-and-half 1/4 cup chicken stock
Salt and white pepper, to taste
1/2 cup dried bread crumbs and grated parmesan cheese

Preheat oven to 350. Arrange mushroom slices in a shallow casserole dish. In a small frying pan, saute shallots in 1 tbsp butter over medium heat until soft.

At same time, melt 1/2 cup butter over low heat in a small saucepan. Once butter is melted, add flour and mix well. While stirring constantly, increased heat to medium high. Cook flour mixture for 3 minutes and add half-and-half and bring to a boil. Add chicken stock, salt and pepper and return to a boil. Add shallots. Pour sauce evenly over mushroom slices. Sprinkle with bread crumbs. Bake for 20 minutes.

Remove from oven and sprinkle with parmesan cheese. Return to oven right before serving and bake for about 5 minutes, or until cheese melts.
