ENGLISH TOFFEE

1 cup unsalted butter
1 1/3 cups sugar
1 tbsp light corn syrup
3 tbsp water
1 lb bittersweet chocolate
1 lb pecans, ground

Melt butter and sugar. Add corn syrup and water and bring to a boil over high heat until candy thermometer reaches 300 degrees. Pour onto a greased cookie sheet and allow to cool. Break into pieces and dip into melted chocolate and sprinkle with ground pecans.
