1 1/2 tbsp unsalted butter, softened
2 tbsp sliced fresh chives
2 tsp chopped fresh rosemary
1 (1- to 1 1/4-lb) porterhouse steak, about 1 inch thick
1 tsp olive oil
1/2 tsp sea or kosher salt and ground pepper
1 tbsp balsamic vinegar

Heat grill. In small bowl, stir together butter, chives and rosemary; let stand at room temperature 15 minutes or until ready to use. (Flavored butter can be made up to 24 hours ahead. Cover and refrigerate. Bring to room temperature before using.)

Brush both sides of steak with oil; sprinkle with salt and pepper. Place on gas grill over medium-high heat or on charcoal grill 4 to 6 inch from medium-high coals. Cover grill. Grill 8 to 10 minutes for medium-rare or until of desired doneness, turning once. Place steak on platter; immediately sprinkle with vinegar. Top with flavored butter. Serves 2
