Wet mix
1 cup buttermilk
1 egg
3 tbsp vegetable oil
Dry mix
1 cup flour
1 cup oats
1/3 cup packed brown sugar
1 tbsp baking powder
1/2 tsp salt and baking soda
1 cup blueberries
Preheat oven to 400. Grease muffin pans. Beat wet ingredients and fold in dry to the wet ingredients until just combined. Spoon into muffin pan and bake for 20-25 minutes or until golden.
