1/2 cup fresh lime juice
2 cloves garlic, minced
1/4 tsp ground oregano, ground cumin, chili powder, kosher salt and red pepper
1 1/4 lbs Flank Steak, cut in 1 inch pieces
red, yellow and green bell peppers, cut into 1 inch pieces
1 purple onion, cut into 1 inch pieces
Combine lime juice and next 6 ingredients in a small bowl. Thread steak, bell peppers and onion alternately on 4 (12 inch) skewers. Pour lime juice mixture over skewers and marinate in the refrigerator 2 hours.
Spray grill with cooking spray. Place skewers on grill; cover with grill lid, and cook, turning occasionally, 5 to 7 minutes on each side or until desired degree of doneness. Serves 4-6
