4 to 4-1/2 lb pork butt
2 cups water
1/2 cup soy sauce
2 tsp liquid smoke (or more to taste)
3 Tbsp plus 1-1/2 tsp coarse sea salt
1/4 tsp ground ginger

Place pork in large crock pot. Using a large two-prong fork, poke holes in the top and sides of the roast. Combine all other ingredients in a bowl and add to the crock pot. Cook on low for 6 hours. DO NOT LIFT LID.

After 6 hours, turn the roast over and resume cooking for 2 to 2-1/2 hours. The roast is ready when it pulls apart easily or falls off of the bone. Shred or pull apart with a large fork. Serves 10

To reheat: The pork may be microwaved or wrapped in foil (add a tsp or two of butter if dry) and baked in a 250 degree oven for about 20 min.
