6 (8 oz) loin pork chops, cut about 1 inch thick
1 tbsp salt
Pepper, to taste
1/4 cup vegetable oil
1 cup finely chopped onions
1 tsp finely chopped garlic
2 cups water
2 tbsp distilled white vinegar
Pat chops completely dry with paper towels and season both sides with salt and pepper. In a heavy skillet, heat oil and brown chops on both sides. Stir in onions and garlic, add the water and bring to a boil over high heat. Reduce heat to low, cover tightly and simmer for about 30 minutes. Arrange chops on platter. Stir vinegar into the cooking liquid, taste for seasoning and pour the sauce over the chops. Serve.
