3 lbs baking potatoes, peeled and quartered
2 tbsp butter
6 oz whipped cream cheese with chives
2 eggs
1/2 tsp salt
Pepper
2 tbsp grated parmesan cheese

Boil potatoes until tender and drain. Preheat oven to 400. Mash potatoes and add butter. Stir in cream cheese, eggs, salt and pepper. Whip until fluffy. Grease a 2 quart casserole dish and spoon in mixture. Sprinkle with cheese. Bake for 40 minutes or unitl golden on top and sizzling.

NOTE: Can be prepared up to 8 hours in advance, covered and refrigerated.
