4 boneless, skinless chicken breasts
1/4 tsp salt and pepper
1 (3 oz) pkg softened log goat cheese or cream cheese
1 (3 oz) pkg cream cheese, softened
1/2 tsp dried basil
8 large fresh spinach leaves
1 (7.25 oz) jar roasted sweet red peppers drained
Additional fresh spinach leaves
Place chicken between 2 sheets plastic wrap; flatten to 1/4 inch thickness with a meat mallet. Sprinkle with salt and pepper. Stir together next 3 ingredients and spread evenly over each chicken breast. Top with 2 spinach leaves and roasted red peppers. Roll up, jelly-roll fashion, starting with a short side. Secure rolls with toothpicks and place seam side down in a lightly greased baking dish. Bake, covered, at 350 for 15 minutes. Uncover and bake 20 minutes longer. Slice cross-wide into 6-8 slices and serve on a spinach-lined plate.
