Recipes Butternut Squash with Maple and Bourbon

(1) Preheat oven to 350 degrees F. Cut squash in half lengthwise; remove and discard seeds. Place squash halves, cut sides up, in an ungreased 3-quart rectangular baking dish. In a small saucepan combine maple syrup, butter, and bourbon. Cook over medium-low heat until butter is melted. Pour mixture over squash; sprinkle with salt.

(2) Bake, covered, for 30 minutes. Bake, uncovered, about 45 minutes more or until squash is tender, basting occasionally. To serve, cut squash into 2-inch slices. Spoon syrup mixture from dish over squash.
