Oven-Fried Pesto Chicken

2 to 3 tbsp prepared pesto
4 chicken breast halves
1 cup panko bread crumbs
1/2 cup fine dry bread crumbs
2 tsp paprika
1/2 tsp salt
1/8 tsp ground black pepper

Preheat oven to 400. Lightly grease a baking pan large enough to hold the chicken in a single layer. Wash chicken breasts and pat dry. Gently pound the chicken between sheets of plastic wrap to even thickness.

In a food processor, pulse the panko and dry bread crumbs with the paprika, salt, and pepper, until well combined.

Rub each chicken breast with about 1 to 2 teaspoons of pesto, then press in the crumbs to thoroughly coat.
