CHICKEN ROYALE

4 boneless, skinless chicken breasts, pounded about 1/4 inch thickness
4 oz Boursin or other herb cheese, quartered
1/2 cup English walnuts, chopped
4 spinach leaves, slightly steamed
1/2 tsp salt and pepper
1/2 cup dry white wine and raspberry vinaigrette dressing
2 tbsp butter
Cooked rice for 4 servings
Raspberries for garnish

Roll the cheese quarters in walnuts. Place 1 spinach leaf on each breast and top with cheese quarter. Fold chicken around spinach and cheese to form a mound. Sprinkle salt and pepper over chicken. Place chicken in baking pan. Cover and bake at 350 for 30 minutes or until chicken is fork tender.

In a small frying pan, mixt together wine and vinaigrette. Cook over medium heat until sauce is reduced by half; stir in butter. Pour sauce over chicken. Serve with rice and garnish with raspberries. Serves 4
