3 tbsp vegetable oil
2 tbsp butter
1 small onion, finely chopped
2 garlic cloves, minced
1/2 cup dry white wine
1 pint shucked clams, minced, liquid reserved
2 tbsp minced fresh parsley
1 tsp olive oil
3/4 tsp white pepper
12 cherrystone clam shells, scrubbed clean
1 cup seasoned bread crumbs
Preheat oven to 375. Heat oil and butter in a skillet and saute onions and garlic until hold. Drain the liquid into the mixture and stir in the sine. Simmer for about 5 minutes. Mix remaining ingredients except the bread crumbs and heat thoroughly. Spoon into clam shells and top with bread crumbs. Bake for a bout 15 minutes. Serves 12
