2 lbs flounder fillets
2 (10 oz) pkg frozen chopped spinach, cooked and drained well
1 cup ricotta cheese
1/2 tsp basil
2 tbsp butter, melted
2 tbsp flour
1/4 tsp salt
Dash pepper
1 cup milk
1/4 cup Parmesan cheese
1/2 cup dry white wine (optional)
1 tsp lemon juice

Arrange half the fillets in greased backing dish. Mix drained spinach, ricotta, and basil in a bowl. Spoon over fillets, then top with remaining fillets.

Blend butter, flour, salt, and pepper in a sauce pan. Add milk slowly and cook until thickened, stirring constantly. Add 1/4 cup cheese, wine(optional) and lemon juice. Spoon over top. Bake at 350 for 20 minutes or until fish flakes easily. Then sprinkle with Parmesan cheese. Broil until lightly browned. Serves 6
