Finnish Gouda Meatballs
Category: Meatballs
1 pound ground beef
1 pound ground pork
½ cup finely diced onion
8 ounces Gouda cheese, shredded
2 eggs
½ cup Japanese panko crumbs
1 cup loose packed fresh parsley, chopped
1 + ½ teaspoons salt
1 teaspoon allspice
¼ teaspoon black pepper
vegetable oil, for frying
2 cups chicken broth
½ cup heavy cream
Buttered egg noodles, mashed potates or rice
(1) In a large mixing bowl combine all the meatball ingredients together with a fork.
(2) Form the meatballs into 1 + ½-inch sized balls and place on a parchment lined baking sheet, cover with plastic wrap and refrigerate ½ hour.
(3) Heat a large frying pan over medium heat with enough oil to generously cover the bottom.
(4) Fry the meatballs in batches, browning on all sides but not cooking all the way through. Remove to a paper towel lined platter.
(5) Preheat the oven to 400 degrees F. Cook the meatballs right on the parchment lined baking sheet 15 minutes.
(6) Add the chicken broth to the frying pan and nestle the meatballs back in. Bring to a slow simmer and cook 20 minutes with the lid on.
(7) Add the heavy cream and cook 5 more minutes with the lid off.
(8) Serve over buttered egg noodles, mashed potatoes or rice.
