*LEMON OREGANO GREEK-STYLE CHICKEN*

1 large lemon
2 tbsp chopped parsley
1 1/2 tsp dried oregano
1/2 tsp ground pepper
2 clove garlic, minced
1/2 tsp salt
2 chicken breast halves with skin and bones
1 tbsp olive oil
1/2 cup plain yogurt

Grate 1 1/2 tsp peel from lemon. Cut chicken in half. Cut 2 slices from 1 half and reserve. Squeeze enough juice from remaining half to measure 1 tsp. Place peel into a small bowl. Add parsley, oregano and pepper.

Place garlic on a cutting board and sprinkle with salt. Rub mixture with a knife to make a paste and place in bowl with seasonings.

Rub fingers between chicken and skin to loosen the skin but do not remove. Spread generously 1/2 tbsp seasoning mixture under skin of chicken. Rub outside of chicken with oil and season with salt and pepper.

Sauce: Mix yogurt and 1 tsp lemon juice into remaining seasoning mixture.

Preheat broiler or grill for medium high heat and cook chicken about 12 minutes on each side. Arrange chicken on platters. Garnish with lemon slices and remaining 1 tbsp parsley. Serve with sauce.

NOTE: I like to serve with orzo mixed with sauteed assortment of peppers, onions and mushrooms tossed with olive oil.
