3 lbs yellow squash, sliced and boiled
1/2 cup butter, melted
1 cup sour cream
1 can cream of chicken soup
2 onions, finely chopped
5 oz sliced water chestnuts, drained
2 oz diced pimento, drained
8 oz herb stuffing mix, divided

Combine 1 1/2 cups liquid reserved from boiling squash with remaining ingredients except 1/2 cup stuffing. Add salt and pepper to taste. Pour into 2 1/2 quart casserole dish. Top with remaining stuffing. Bake at 350 for 30 minutes. Serves 12
