2 eggs beaten
3/4 cup bread crumbs
1/2 cup tomato juice
2 tbsp parsley
1/2 tsp dried oregano, crushed
1/4 tsp salt and pepper
1 small clove garlic, minced
2 lbs ground beef
8 thin slices boiled ham
6 oz shredded mozzarella cheese
3 slices mozzarella cheese, halved diagonally

Combine first 8 ingredients. Stir in ground beef; mix well. On foil or waxed paper, pat meat into a 12x10 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Sprinkle shredded cheese over ham.

Starting from short end, carefully roll up meat, using foil or wax to lift, seal edges and ends. Place roll, seam side down in a 13x9 inch baking pan. Bake at 350 for 1 1/4 hours or until done, center will be pink due to ham. Place cheese slices over top of roll, return to oven for 5 minutes or until cheese melts. Serves 8
