1 1/2 lbs orange roughy fillets, about 1/2 inch thick
1 (8 oz) pkg cream cheese, room temperature
2 tbsp mayonnaise
2 tbsp milk
1 tbsp dry onion soup mix and lemon juice
2 tsp dried tarragon, crushed and Dijon-style mustard
1 1/2 cups soft bread crumbs
1 cup chopped parsley
1/2 cup grated parmesan cheese
1 tsp paprika
If fish is frozen, thaw. Cut into 6 serving-size pieces. Arrange in a greased shallow baking dish.
In a bowl, combine cream cheese and next 5 ingredients. Spread mixture over fillets. Bake at 350 for 10-12 minutes or until fish almost flakes.
Topping: Combine bread crumbs and remaining ingredients and sprinkle over fish. Bake for 3-4 minutes or until crumbs are golden. Serves 6
