5 tbsp melted unsalted butter
3 cups mashed baked sweet potatoes
1 1/2 tsp grated orange rind
9 tbsp orange juice
1 1/2 cups crushed pineapple packed in its own juice, drained
1 tsp salt
Brown sugar
Whip butter into potatoes. Add next 4 ingredients. Pour mixture into well buttered baking dish. Sprinkle with brown sugar. Bake, covered, at 375 for 30 minutes.
