1/2 cup Onion Chopped
1/2 cup Carrot Finely Chopped
1/2 cup Celery Finely Chopped
1 clove garlic, minced
1/2 cup Butter
1 cup flour
1/2 tsp hot pepper sauce
12 oz Beer Any Brand
2 cups Chicken Broth
1 tsp Salt
1 Tsp Ground Cumin
1/4 Tsp Ground Nutmeg
1 dash of Ground Cloves
1 dash of Pepper
1/2 tsp worcesteshire sauce
1 bay leaf
2 cup Sharp Cheddar Cheese Shredded or 1 1/2 cups cheddar and 1/2 cup swiss
1 cup Sour Cream

Cook and stir onion, garlic, carrot and celery in margarine in 2 qt saucepan until tender; add flour and cook 3 minutes. Stir in hot pepper sauce, beer and broth and stir until flour is dissolved. Heat to boiling; reduce heat. Cover and simmer 10 minutes.

Stir in remaining ingredients except sour cream and cheese. Heat to boiling; reduce heat. Cover and simmer for 30 minutes. Remove from heat; stir in cheese until melted. Stir in sour cream. Note: Can add bias sliced smoked bratwurst or smoked sausage.
