PORK AND NOODLE BAKE

Category: Casseroles - Pork

1/4 lb wide egg noodles, cooked al dente, drained
1/2 onion, chopped
1 clove garlic, minced
1/2 lb ground pork
2 tbsp plus 2 tsp sour cream
1 egg
2 tbsp chopped parsley
1 tbsp poppy seeds
2 tbsp plain bread crumbs
1 tsp unsalted butter

Preheat oven to 350. While pasta is cooking, saute onions, garlic and pork until meat is browned; drain. Stir in salt and pepper, to taste.

Combine next 4 ingredients together in a bowl. Stir in noodles and pork mixture. Mix thoroughly and pour in the casserole dish. Sprinkle with bread crumbs and dot with butter. Bake for 50-60 minutes or until center is set up and top is brown. Let stand 5 minutes before serving.
