3 tbsp butter
1 celery stalk, chopped
3 green onions, chopped
1 large onion chopped
3 clove garlic, finely minced
1 cup water and white wine vinegar
1/2 cup ketchup
1/4 cup lime juice and packed brown sugar
2 tbsp chili sauce and Worcestershire sauce
1 tbsp dry mustard
1 tsp pepper, thyme, basil and oregano
Salt, to taste

Heat butter and saute vegetables and garlic over low heat, about 5 minutes, stirring to prevent onions from browning. Add remaining ingredients and mix well. Bring to a boil and reduce heat. Cook for 18 minutes, stirring occasionally.
