1 (8 oz) pkg cream cheese, room temperature
1/3 cup sugar
1/2 tsp rum extract
3 1/2 cups whipped topping
1 (8 1/4 oz) can crushed pineapple, undrained
2 2/3 cup coconut
Beat first 3 ingredients until smooth. Fold in 2 cups whipped topping, undrained pineapple and 2 cups coconut. Spread on pie plate lined with plastic wrap. Invert to a serving plate, remove pan and plastic wrap. Spread remaining whipped topping and sprinkle with coconut. Freeze until firm, about 2 hours. Cut into wedges to serve.
