PROSCIUTTO SPINACH SALAD

1/4 onion thinly sliced
2 thin slices prosciutto ham cut up in small squares or thin ribbons
1/4 cup pine nuts
1 bunch of spinach leaves – torn up

Dressing:
1/4 cup olive oil
1/4 cup balsamic vinegar
Touch of honey or sugar
Optional: Small spoon full of dijon mustard

In a frying pan, fry the onions for a few of minutes until they begin to soften, add the prosciutto ham and warm up, add the pine nuts towards the end. Put the spinach into the pan with the other stuff and heat until it is slightly wilted. Remove to a platter or salad bowl. Pour the dressing mixture over the spinach and toss to mix. Serve.

Serves 2
