1 (8 oz) pkg manicotti shells, cooked al dente, drained
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1 (16 oz) container ricotta cheese
1 cup grated parmesan cheese, divided
1 egg
2 1/2 cups diced cooked chicken breast
1 tbsp basil
3/4 tsp pepper
3 cups tomato sauce or spaghetti sauce

Preheat oven to 350. Mix together ricotta cheese, 1/2 cup parmesan cheese and egg. Stir in remaining ingredients except tomato sauce. Spoon the cheese mixture into the pasta shells and lay in a 13x9 inch baking pan. Cover with sauce and sprinkle with remaining parmesan cheese. Cover and bake for 20 minutes. Remove cover and bake an additional 15 minutes, or until cheese is golden brown.
