2 cups flour
1 cup sugar
1/2 cup flaked coconut, toasted
1 tbs baking powder and salt
2 eggs, beaten
3/4 cup milk
1/4 cup canola oil
4 tbsp butter, melted
1 tsp vanilla extract
1/3 cup crushed pineapple (packed in it’s own juice)
Preheat oven to 350. In large mixing bowl combine flour, sugar, coconut, baking powder and salt; mix well. Stir in eggs, milk, oil, butter, and vanilla; blend well. Stir in pineapple and mix well. Spoon into a 12 muffin pan. Bake for 30 minutes or until tests done with wooden toothpick.
