2 cups flour
1 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup butter, melted and cooled
2 eggs, lightly beaten
1 (8 oz) container sour cream
1/2 tsp coconut extract
3 oz sweet grated coconut
1/4 cup chopped maraschino cherries
Small can crushed pineapple, drained well

Combine flour, sugar, baking powder, and salt; set aside. Combine and mix margarine, eggs, sour cream, coconut extract, coconut, cherries, and pineapple. Add to dry ingredients. Pour into greased muffin tins and bake at 375 for 25-30 minutes.
